Vegetable Fried Rice

This vegetable fried rice recipe is loaded with mouth watering colors, brought to you by...the veggies! It is ready in under 30 minutes and can be served as a side dish or as main course (especially if you add in alternative ingredients).

Asian food is a classic cuisine and this is one of the most classic of them all. It goes great with broiled chicken breast, as well as with air fryer dishes such as air fryer steak or air fryer salmon.

This is dish is also a great way to make the best of your leftovers or if you want to make plenty of food to eat more than once. You could safely cook enough food for the first course to use some of it the next day(s).

Ingredients

As you would expect, the ingredients are mostly a bunch of vegetables, seasoning ingredients and...surprise, surprise: RICE!

  • White rice
  • Avocado oil
  • White onion
  • Eggs (replace with tofu to make it 100% vegan/vegetarian)
  • Carrots
  • Scallions
  • Frozen peas
  • Garlic cloves
  • Sea salt
  • White pepper
  • Green onions
  • Soy sauce
  • Toasted sesame oil

Preparation

The instructions look like this, at a high level:

  1. Heat the avocado oil in a wok over high heat until smoking. Add half of rice and cook, stirring and tossing, until the rice is pale brown and toasted and has a lightly chewy texture.
  2. Transfer to a medium bowl. Repeat with more oil and remaining rice.
  3. Return all the rice to the wok and press it up the sides, leaving a space for the vegetables. Add avocado oil to the space.
  4. Add onion, carrot, scallions, and garlic and cook, stirring gently, until lightly softened and fragrant.
  5. Toss with rice to combine. Add soy sauce and sesame oil and toss to coat. Season to taste with salt and white pepper.
  6. Push rice to the side of the wok and add remaining avocado oil.
  7. Break the egg into the oil and season with a little salt. Use a spatula to scramble the egg, breaking it up into small bits.
  8. Toss the egg and the rice together.
  9. Add frozen peas and continue to toss and stir until peas are thawed and every grain of rice is separate.
  10. Serve immediately and enjoy!

This Chinese cuisine classic vegetable fried rice is a crowd favorite as a main course and as a side dish. It's quick and easy to make, customizable with your favorite mix-ins, and equally as important: delicious!

Ingredients
  • 2 cups of cooked white rice
  • 2 tablespoon of avocado oil
  • 1 small finely chopped white onion
  • 1 medium peeled and diced carrot
  • 2 thinly sliced scallions
  • 2 minced garlic cloves
  • 1 teaspoon of soy sauce
  • 1 teaspoon of toasted sesame oil
  • sea salt
  • white pepper
  • 1 large egg
  • 4 ounces of frozen peas
Instructions
    Preparation
  1. Cook the riceWhite rice fully cooked.

    The rice must already be cooked before proceeding.

    Cook the white rice as you normally would before going to the next step, if you haven't already.

Note

Use Cold Rice

Regardless of the type of rice you use, it is required that it is cooled down after cooked. Fried rice made with just-cooked rice will be softer and won’t have those crispy little bits.

Make sure you don't use freshly cooked rice for your vegetable fried rice recipe.

Rinse The Rise

If you are cooking your rice from raw in order to make fried rice, make sure to rinse off excess starch first.

A quick dunk and shake in a bowl of cold water, or a 30-second rinse under a cold tap while agitating the rice should do it.

Excess starchiness causes the rice to clump.

Break Up The Rise

If you're using rice that has had a chance to clump or go stale, break it up before it goes into the wok. This will ensure that the rice separates into individual grains without breaking or getting crushed.

Cook Vegetables Uniformly

Be sure to cut your vegetables into uniformly sized pieces so that they’ll cook at the same rate.
