Instructions
For Rosemary Roasted Potatoes

Preheat your oven to 200°C (392°F).

Wash and place 400 g of small potatoes in a mixing bowl.

Season them with salt and pepper.

Drizzle in 2 tbsp olive oil and toss to coat evenly.

Add 1 tsp fresh rosemary leaves and mix well.

Transfer the potatoes to a baking tray, optionally add extra rosemary on top, and bake for 30 minutes or until golden and tender.
For the Chicken Roulades

Slice each chicken breast fillet horizontally and gently pound to even thickness.

Season both sides with salt and pepper.

Spread 1 tsp Dijon mustard over each fillet.

Layer on 2 slices of Parma ham, 40 g baby spinach, and 50 g shredded cheese per fillet.

Roll the fillets tightly and secure with kitchen twine.
