- Fettuccine pasta – We prefer fettuccine for this steak alfredo recipe, but you could also use penne or orechiette for it.
- Steak – You can use any kind of steak you prefer, but we recommend looking for one with good marbling like a New York Strip or flat iron steak. We'd also recommend a porterhouse or ribeye steak, or a filet mignon that is melt-in-your-mouth tender.
- Butter – Key ingredient to prepare the delicious sauce!
- Coconut oil – We'll be making the steak in coconut oil, given its high smoke point. But feel free to make it with butter if you prefer.
- Heavy whipping cream – Along with butter, this is what makes the alfredo sauce super rich, creamy and silky!
- Cheese – A combination of freshly grated parmesan and gorgonzola cheese makes the alfredo sauce that much more decadent and pairs great with the flavory sliced steak.
- Sea salt – For the steak seasoning and because we prefer sea salt over table salt.
- Black ground pepper – The other seasoning ingredient you really need to season the steak.
Preparation

- Season the steaks – Make sure the steaks come to room temperature to ensure they will cook evenly, and then sprinkle and rub salt and pepper on them.
- Sear the steaks – Preheat a large pan over medium-high heat. Add coconut oil and/or butter to the pan until melted (if using butter). Add the steaks and sear them, while frequently flipping, until desired doneness. Medium-rare is recommended, at around 135° F when tested with a digital meat thermometer.
- Boil the pasta – At the same time the steaks are cooking, boil your dried fettuccine noodles in water. Cook according to package directions.
- Prepare the sauce – Add butter, cream, the cheeses, salt and pepper to the pre heated pan or skillet. Cook for about 5 minutes until cheeses are melted and sauce is slightly thickened, while stirring frequently.
- Add fettuccine to sauce – Add drained fettuccine to the sauce and toss it coat.
- Serve steaks over pasta – Slice the steaks and serve over fettuccine. You could top it with some more parmesan cheese for added flavor.

Get The Doneness Right!
Using a meat probe, test your steaks and put them out of pan or skillet about five degrees below your desired doneness. This is because the meat temperature will rise while resting.
- Rare: 125°F

- Type of steak: We used New York strip for this particular recipe, but any medium-thick (about half an inch) steak that you like should work.
- Watch the thickness: Make sure your steak is at least half of one inch thick because thinner ones will cook too fast without browning.
- Steak at room temperature: Allow your steak to get to room temperature about 30 minutes before cooking for best results.
- Oil switching is allowed: If you don't want to use coconut oil, we recommend you use a high quality avocado oil. You could also skip using oil completely and use butter instead to cook the steaks.
