Ingredients Breakdown

For One-Pot Ground Beef Pasta Recipe

  • Ground beef: It is the main ingredient of the pasta. We are using the simple store-bought ground beef; you can get it from the butcher as well.
  • Butter: Butter not just cooks the beef but also adds a buttery richness.
  • Onion: Onion enhances the meaty flavor of the beef.
  • Garlic: We are adding thinly sliced garlic to the dish. It gives a rich, garlicky flavor.
  • Salt: We don’t want our One-Pot Ground Beef Pasta to taste bland.
  • Black Pepper: A touch of black pepper adds a peppery kick to the pasta.
  • Italian herbs: The Italian herbs add a great herby flavor. Since it is a medley of different herbs like oregano, thyme, rosemary, and more, you don’t have to use the herbs separately.
  • Red pepper flakes: If you like your pasta spicy, then red pepper flakes are a must to add. Otherwise, you can skip it.
  • Chicken stock or broth: We are using the low-sodium chicken broth for the pasta to control the saltiness. It also helps in seasoning the pasta while boiling.
  • Penne pasta: We are using Penne-shaped pasta; you can use any you like.
  • Heavy cream: Heavy cream makes the pasta creamy and rich while balancing the meaty, beefy flavor.
  • Mozzarella cheese: Mozzarella cheese adds a savory, cheesy flavor and the cheese-pull texture to the pasta.
  • Parsley or chives: These are optional, but we highly recommend them. They add a hint of freshness and a pop of color, too.

For the Simple Beef Pasta Recipe

  • Conchiglie pasta: You can use any shell-shaped pasta for this recipe. We like shells because they scoop up the meat sauce, making it the perfect vessel for the sauce.
  • Olive oil: Olive oil will help in browning everything in the pan. It also adds a mild flavor to the sauce.
  • Salt: We need to season everything so the dish doesn’t seem bland.
  • Onion: Onion makes a good base for the beef sauce. It also enhances the savory beefy flavor.
  • Ground beef: Beef is the star of the dish; we are using ground beef for extra beefy bites.
  • Garlic: It adds a spicy, garlicky flavor to the dish.
  • Tomato sauce: We are using store-bought tomato sauce. You can use homemade or the one you like too.
  • Tomato paste: Tomato paste adds a touch of acidity to the sauce. It also gives it the bright red color.
  • Dijon mustard: It adds a nice touch of earthy flavor.
  • Italian seasoning: We like herbs in the beef pasta since they add freshness and elevate the taste, too.
  • Heavy cream: Heavy cream makes the pasta sauce super creamy.
  • Basil: Basil is optional, but we love to add it. It adds peppery notes to the sauce.
  • Pepper: Again, pepper is the most basic seasoning every dish needs.
  • Parmesan: It is optional, but highly recommended for garnish.

For the One-pot Ground Beef Pasta

  1. Heat the butter in your pot over medium heat until melted and slightly bubbly. Add ground beef straight into the pot. Break it up with your spoon and cook until browned evenly, no pink left.
  2. Add the chopped onion and sauté until soft and translucent — this is where your kitchen starts to smell amazing.

  3. Toss in the garlic and stir for about 30 seconds

  4. Season with salt, pepper, Italian herbs, and chili flakes.

  5. Pour in your chicken stock or broth and bring it to a gentle boil. Once it’s bubbling, add the pasta straight into the pot — no separate pot needed, no strainer in sight. Stir occasionally so it doesn’t stick to the bottom. The pasta will absorb all those meaty, herby juices while cooking — flavor city!

  6. When the pasta is tender and most of the liquid is absorbed, pour in the heavy cream. Stir slowly — the sauce will instantly turn silky and luscious. If you’re adding cheese, now’s the time to toss it in so it melts right into the sauce.

  7. Turn off the heat, sprinkle chopped parsley or chives on top, and give it one last loving stir.

  8. Serve immediately — creamy, cozy, and all made in one pot.

For Simple Beef Pasta

  1. Add pasta to the boiling salted water and cook until al dente — tender but still with a bite. Once cooked, drain and set aside. Reserve about half a cup of pasta water for later — it’s pure gold for adjusting the sauce texture.
  2. Heat olive oil in your skillet over medium heat. Add the chopped onion and sauté until soft and translucent.

  3. Toss in the minced garlic and stir for 30 seconds until fragrant (don’t let it brown — garlic turns bitter quickly).

  4. Add your ground beef straight to the pan. Break it up as it cooks, letting it brown evenly.

  5. Season with salt, pepper, and Italian seasoning for that deep, comforting flavor. Cook until the beef is no longer pink and smells incredible — that’s your base of deliciousness right there.

Let the beef sit for a minute before stirring; caramelization adds flavor depth and a beautiful color.
  6. Add tomato sauce, tomato paste, Dijon mustard, and give everything a good stir. You’ll notice the sauce turning thicker, richer, and more fragrant with every swirl. Let it simmer gently for 5 minutes — enough time for all the flavors to mingle and mellow together.

  7. Lower the heat, then pour in the heavy cream. Stir until the sauce turns a beautiful orangey-red — rich, smooth, and irresistible. Taste and adjust seasoning — a pinch more salt or pepper can make everything pop.

Add the cream off the heat for a smoother, silkier sauce that won’t split.
  8. Add the cooked pasta straight into the sauce and toss until every shell is fully coated. If the sauce feels too thick, add a splash of the reserved pasta water until it’s glossy and clings perfectly.

  9. Turn off the heat and garnish with fresh basil or grated Parmesan for that final flourish. Serve immediately while it’s hot, creamy, and full of that irresistible tomato-beef aroma.

Note

Substitutions & Variations

  • Pasta: Conchiglie (shells) are great for holding the sauce, but penne, rigatoni, or fettuccine work beautifully too. Short pasta shapes cling to the creamy tomato sauce best.
  • Protein: Swap the ground beef for turkey, chicken, or even plant-based mince for a lighter, leaner version. Each brings its own flavor twist while keeping that hearty texture.
  • Dairy-free: Replace the cream with coconut milk or a dairy-free alternative like oat cream. You’ll still get that smooth, velvety texture — just with a hint of natural sweetness.
  • Add veggies: Toss in spinach, peas, or sautéed mushrooms to add more color, fiber, and nutrients. They blend effortlessly into the sauce and make it even more satisfying.
  • Extra flavor boost: A dash of Worcestershire sauce, chili flakes, or a sprinkle of smoked paprika can take the flavor to the next level without extra effort.

Frequently Asked Questions

Expand All:

Can I use a different type of pasta?

Absolutely! Penne, fusilli, macaroni, rigatoni — anything that holds sauce works great. For the one-pot version, choose pasta that cooks in about 10–12 minutes for the perfect texture.

Can I make these recipes with chicken or turkey instead of beef?

Yep! Ground chicken or turkey both work beautifully. Just note that they’re lean, so you may want to add a touch of olive oil or butter to keep the sauce rich and smooth.

My sauce turned out too thin — how do I fix it?

Let it simmer uncovered for a few extra minutes to reduce, or stir in a spoonful of cheese or a splash of cream to thicken. For a quick fix, a teaspoon of tomato paste works wonders.

Can I prepare the pasta ahead of time?

Yes, but for best results, cook the pasta slightly under (al dente) and toss it in a little oil so it doesn’t stick. Reheat gently in the sauce with a splash of broth or cream.

What’s the secret to getting the sauce to stick to the pasta?

Timing! Add the pasta to the sauce while both are still hot. The starch helps bind everything together into that dreamy, glossy coating.

My cream curdled — what went wrong?

Cream can split if added to a very hot pan. Lower the heat before adding it, and stir continuously until combined. A tablespoon of tomato sauce can help emulsify if it starts separating.

Can I make this dairy-free?

Totally! Use coconut milk or a dairy-free cream alternative. The flavor changes slightly, but you’ll still get a silky sauce with great texture.

How long can I store leftovers?

Both pastas keep well in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or cream to loosen the sauce.

Can I freeze it?

Yes! Let the pasta cool completely before transferring to freezer-safe containers. It’ll last about 2 months. Thaw in the fridge overnight and reheat gently on the stove.

My pasta stuck to the bottom of the pot — what did I do wrong?

It’s likely the heat was too high or you didn’t stir enough. Keep it at medium-low and give it a good stir every few minutes, especially for the one-pot version.

How many servings does each recipe make?

Both recipes serve about 3–4 hungry people — or 2 if it’s been a long day and you’re eating straight from the pot (no judgment).
