Our inspiration for churros was to avoid waiting in long queues at your favorite bakery or churro stall, especially at Fairs. This foolproof recipe makes the churro dough over a stovetop within minutes. Then all you need to do is fry them and enjoy them with the yummy chocolate sauce.

For the Churros

  • Water: Water brings all ingredients together as a dough. It also makes the churro fluffy and crispy when they are fried,
  • Sugar: Sugar makes the churro a bit sweet. You can swap it with your preferred type of sugar, too.
  • Salt: It helps in enhancing the overall flavor of the churros.
  • Butter: Butter makes the churro rich in taste. It also helps in getting the golden crispy outside of the churro when fried.
  • Flour: It is the base ingredient. We are using All-Purpose Flour. We suggest avoiding cake flour, since it will make the churro dense and chewy.
  • Eggs: Eggs add richness to the churro and work as a leavening agent too. 

For the Chocolate Sauce

  • Chocolate: We are using bitter-sweet chocolate. We suggest high-quality chocolate of your preference.
  • Sugar: Sugar balances out the bitterness of the chocolate with a hint of sweetness. Feel free to use any sugar you like. 
  • Milk: We are using full-fat Milk, but you can use any plant-based milk of your choice. If you are using alternatives, then you might need more cornstarch to make the sauce thick.
  • Cornstarch: It helps in thickening the chocolate sauce.
  • Water: It is used to dissolve the cornstarch.

Prep & setup

  1. Fill your frying pot with oil (about 4โ€“6 cm deep) and heat slowly over medium-low โ€” ideal frying temperature is 170โ€“180 ยฐC (340โ€“355 ยฐF).
  2. Line a tray or plate with paper towels for draining.

Make the churro dough (pรขte ร  choux base)

  1. In a heavy pot, combine water, sugar, salt, and butter. Bring just to a simmer.
  2. Once boiling, immediately add flour all at once.
  3. Stir fast and continuously with a wooden spoon until it forms a smooth dough that pulls away from the potโ€™s sides.
  4. Return to very low heat for 30โ€“60 seconds while stirring to dry the dough slightly โ€” this prevents sogginess later.
  5. Transfer dough to a mixing bowl and let it cool for about 5โ€“7 minutes, until warm but not hot to the touch.
  6. Beat 1 egg in a small bowl.
  7. Crack the egg in the dough bowl and start mixing with an electric mixer until well combined.
  8. Gradually add the beaten egg to the dough โ€” a little at a time โ€” stirring after each addition.
  9. The mixture may look separated at first, but keep mixing until it becomes smooth, glossy, and pipeable.
  10. Youโ€™re looking for a thick dough that holds ridges when piped but isnโ€™t stiff.
  11. Cover the bowl with cling film and refrigerate for about 30 minutes.

Make the Chocolate Sauce

  1. In a cup, mix cornstarch with water to form a smooth slurry.
  2. In a small saucepan, combine milk and sugar. Heat gently until steaming but not boiling.
  3. Add chopped chocolate, stirring until melted and glossy.
  4. Slowly whisk the slurry into the chocolate mixture and cook on low, stirring constantly until it thickens slightly (about 1 minute).
  5. Remove from heat and keep warm on the lowest setting or cover to retain heat.

Pipe the churros

  1. Fit your piping bag with a French star tip (โ‰ค10 mm) and fill it with dough.
  2. Gently squeeze the dough out on a parchment paper.
  3. Pipe 10โ€“12 cm (4โ€“5 inch) strips directly into the hot oil (or onto parchment, then transfer carefully).
