Prep & Setup

  1. Separate eggs carefully — no yolk in the whites
  2. Brew the coffee and let it cool
  3. Line baking tray with parchment paper
  4. Cut open and clean your milk carton (or prepare mold)
  5. Preheat oven to 350°F / 175°C

For the Cake

  1. Add half of the sugar to the egg yolks. Beat on medium speed for about 3 minutes until pale, fluffy, and doubled in volume.
  2. In a clean, dry bowl, add egg whites and a pinch of salt. Whip on low until foamy, then gradually add remaining sugar and increase speed. Beat until stiff peaks form.

  3. Fold a few spoonfuls of whites into the yolks to loosen. Then add the rest and fold gently until light and fluffy. Do not overmix.

  4. Sift flour and cornstarch in two batches, folding gently each time. This keeps the batter airy and prevents deflating.

  5. Transfer batter to a piping bag.

  6. Pipe a thin layer onto parchment, slightly larger than your mold shape—dust lightly with powdered sugar.

  7. Bake at 350°F / 175°C for 12–14 minutes until lightly golden. Cool for 5 minutes, then trim edges carefully.

For the Cream

  1. Whisk egg yolks with powdered sugar until pale and thick. Add mascarpone and beat on low speed until smooth and creamy.

Assemble the Tiramisu

  1. Place first sponge layer into mold
  2. Soak with coffee (not too much, not too little)
  3. Spread half the cream
  4. Add second sponge layer, soak again
  5. Spread remaining cream on top
  6. Refrigerate for at least 4 hours, preferably overnight.

Finish & Serve

  1. Dust generously with cocoa powder. Use a warm knife for clean slices. Serve chilled and enjoy every creamy bite.
