This peanut butter oatmeal cookies recipe is a great opportunity to make something yummy out of easy baking! And if you like both peanut butter and baking cookies then this recipe is a must. Freshly baked cookies are hands down the BEST cookies!
We felt inspired to make some cookies after our Peanut Butter Banana Oatmeal recipe that included some of that flavor, so we came up with this one. These cookies turned out to be so soft and chewy with that AMAZING peanut butter flavor!
You don’t need any fancy ingredients to make these cookies and they are likely to become ones that you just keep making more of, either because you feel like getting some or because the people you share them with keep asking for more.
Let’s now take a look at the ingredients…
Ingredients
As we said before, these peanut butter oatmeal cookies don’t need any fancy ingredients. For sure, the peanut butter and the oats are absolutely necessary, but the rest you can even play around with their amounts (or even skip some of them).

- Oats – We recommend you use old fashioned oats and not quick oats for this meal.
- All-purpose flour – Use a non-GMO, no preservatives option such as the King Arthur All Purpose Flour.
- Peanut butter – You could use organic creamy or chunky peanut butter, or could even make it yourself.
- Baking soda – There are MANY baking soda options out there, but make sure you get yourself a healthy one such as the Relative Foods Baking Soda. We want to make sure we’re taking care of what we put in our body!
- Sea salt – We almost always prefer to go with sea salt as opposed to regular salt, given it is well-known for being less processed than table salt.
- Ground cinnamon – Don’t skip this one if you want your cookies to have that yummy cinnamon trace.
- Unsalted butter – Have it at room temperature and make sure it’s a high quality butter, no salt and as organic as possible.
- Granulated sugar – You could also use honey or your favorite granulated sugar, but we prefer this granulated sugar for this particular recipe.
- Brown sugar – For added taste and that browny cookie look!
- Egg – Make sure it comes from free range and pasture-raised chicken. Again, we want to take care of our health in everything we eat!
- Vanilla extract – For added flavor of those cookies! Consider a high-quality vanilla extract for better results.

Peanut Butter Oatmeal Cookies
These tasty cookies are soft, chewy, and full of that mouth watering peanut butter flavor. Peanut butter lovers will absolutely love these cookies and they're healthy and so easy to make!

Preheat the oven to 350° F

Prepare baking equipment while you preheat
Prepare TWO large baking sheets with Silpat baking mats or parchment paper.
Set them aside for later.

Whisk the initial ingredients
Placing them in a medium bowl, whisk together the oats, flour, baking soda, salt, and cinnamon.
Set the bowl aside.

Mix the rest of the ingredients
Using a mixer machine:Â- beat the butter, peanut butter, and sugars together until creamy. This should take about 2 minutes, on medium speed.
- Beat in the egg and vanilla extract.
- Mix until well combined.
We recommend you use a mixer machine for this step, but in case you don't have it you can try mixing these ingredients with a manual mixer. -
Combine all ingredients
Combine all ingredients in the mixer and mix them on the lowest speed.

Scoop the cookies into round balls
Scoop the cookies into round balls and place on the prepared baking sheets.
Make sure to leave 2 inches in between cookies.
Leaving the recommended 2 inches in between cookies you should be able to use both baking sheets, for a total of 18 to 20 cookies. -
Bake for 10-12 minutes
Bake for 10-12 minutes, or until the cookies are lightly browned around the edges, while still soft in the middle.

Remove cookies from oven
Remove cookies from oven and let cool on the baking sheet for about 5 minutes.

Transfer and serve!
Transfer to a wire rack and cool down.
You could either serve them lukewarm or completely cooled down.
