For the Chicken

  1. Beat 2 eggs in a bowl. Add salt, black pepper, Parmesan cheese, parsley, and chopped chili.
  2. Whisk well and set aside.
  3. Flatten one chicken breast using a mallet or rolling pin.
  4. Coat it in flour.
  5. Then dip into the egg mixture. Make sure it’s fully coated.
  6. Heat a pan with olive oil and butter.
  7. Cook the chicken on both sides until golden brown.
  8. Remove and set aside.

For the Sauce

  1. In the same pan, add vegetable broth, garlic, thyme, and balsamic vinegar and butter. Add lemon juice and parsley.

Combine & Serve

  1. Return the chicken to the pan.
  2. Spoon sauce over it and cook for 2 minutes.
  3. Serve hot with extra sauce, Parmesan, and parsley on top.
