You may find yourself with some extra ground beef laying around and not knowing what to do with it. Or, you just really want to make some ground beef dish combined with Mexican flavor. Ground Beef Enchiladas to the rescue!

The Ground Beef Enchiladas are the perfect combination of both worlds, ground beef + Mexican food representation (enchiladas). It’s also a great alternative for the classic chicken enchiladas that you might be so used to at restaurants or even at home.

On top of all that, it comes out with a taco-like flavor, but with a much juicier and ingredients rich result than simple tacos. All of this accomplished in about 30 minutes from scratch!

Ingredients

This recipe comes with very few ingredients, which makes it that much more appealing to make while keeping the tastiness that is expected from enchiladas.

You probably already have these in your kitchen, or can easy be found in your local grocery shop and even online.

  • Ground beef – Make sure you get high quality ground beef and not just any cheap one to ensure better flavor and to safeguard your health.
  • White or yellow onion – Any of the two can get the job done here.
  • Taco seasoning – You could either buy it or make it yourself if you’re up for the challenge.
  • Taco size tortillas – Of course, to wrap up the ground beef.
  • Enchilada sauce – Wouldn’t be an enchilada without this sauce, right?!
  • Cheese – You could choose between Monterrey Jack or Marbled Cheddar.
  • Water – To help with the sauces mix.
  • Optional Toppings – Sour cream, pico de gallo, diced avocado, diced green onions.

Preparation

Here we’ll give you an overview of the instructions to follow to prepare these ground beef enchiladas, but please go below to the recipe card for the detailed instructions.

  1. Preheat oven to 350° F and a large skillet over medium-high heat.
  2. Add ground beef with onion and taco seasoning to skillet and cook until meat is no longer pink.
  3. Drain fat from beef and onion mixture.
  4. Combine with grated cheese in a large bowl.
  5. Pour enchilada sauce in baking dish until bottom is fully covered.
  6. Place tortilla on a flat surface and pour ground beef mix in the middle. Top it with cheese.
  7. Roll up the tortillas and place it in the baking dish with seam side down.
  8. Repeat tortilla steps for remaining tortillas.
  9. Pour the remaining enchilada sauce and cheese over the enchiladas.
  10. Bake until heated through and all cheese is melted.
  11. Put on toppings, if any, serve and enjoy!

Instructions

  1. Preheat the oven and a large skillet

    Preheat oven to 350° F and a large skillet over medium-high heat.

  2. Cook the ground beef

    Add ground beef with onion and taco seasoning to skillet and cook until meat is no longer pink.

  3. Drain fat from beef and onion mixture
  4. Combine ground beef with cheese

    Combine the cooked ground beef with grated cheese in a large bowl.

Baking Instructions

  1. Pour enchilada sauce in baking dish

    Pour half a cup of enchilada sauce into the baking dish.

    Make sure the whole bottom is covered with the sauce.

  2. Prepare the tortillas
    • Place tortilla on a flat surface and pour ground beef mix in the middle.
    • Top it with â…› cup of cheese.
    • Roll up the tortillas and place it in the baking dish with seam side down.
    • Repeat tortilla steps for remaining tortillas.
  3. Pour enchilada sauce

    Pour the remaining enchilada sauce and cheese over the enchiladas.

  4. Bake the enchiladas

    Bake for about 20 minutes until heated through and all cheese is melted.

  5. Serve and enjoy!

Storing

Prepare these enchiladas as instructed, but before baking cover tightly with foil and freeze for up to 3 months.

When ready to bake leave foil on the enchiladas and bake at 375° F for 40 minutes.

Center should be bubbly.

Remove foil and bake an additional 5 minutes.

The Enchilada Sauce

Make sure you NEVER put the enchilada sauce on the INSIDE of the tortillas.

Your enchiladas will result sauce overloaded and not an enjoyable meal at all.

The Toppings

Other than the recommended toppings found in the recipe card, you can also add olives and cilantro to the top of the casserole.

Make sure that the toppings portions don't overwhelm the enchiladas. They're meant to just be delicious companions, but not the main thing.

Save Time

  • Brown the ground beef in advance: Cook the ground beef and onion a day or two ahead of time. You can even make a big batch of browned ground beef and onion to use in other recipes.
  • Make the filling: You can finish cooking the filling by adding taco seasoning and store that in the refrigerator until you’re ready to assemble.
  • Buy pre-diced onion: Save yourself some prep time and buy diced onions in the produce section or salad bar at your grocery store.

  • Add Beans: Add black beans or refried beans to the enchiladas before adding the beef and rolling them up.
  • Use sour cream: Stir sour cream into the red sauce to make these easy beef enchiladas creamy.

What kind of tortilla should I use?

You can use taco size tortillas that could either be flour or corn based.

There are also tortillas made of BOTH flour and corn, which would also be a great option.

How long can this be stored?

If frozen, it can last up to 3 months.

What kind of ground beef do you recommend?

We recommend lean ground beef as there will be less fat to drain off and it just sits better in the stomach later on.

However, you can use any kind you like, but hopefully a high quality one.

Why no oil for cooking?

You don't really need oil to cook the ground beef because the sauce should be enough.

However, if you'd like you can use avocado oil for this recipe.
