Prepare the Layers:

Preheat oven to 350ยฐF (175ยฐC). Grease two 9-inch baking trays and line with parchment paper.

In a large bowl, combine sugar, flour, cocoa, baking powder, baking soda, and salt.

Make a well in center and add eggs, milk, oil, and vanilla. Mix until smooth.

In a separate cup, dissolve the coffee in the boiling water.

Slowly pour this hot coffee mixture into the batter while stirring continuously. The batter will be thinโthis is normal and ensures the cake stays moist. Pour batter evenly into trays.

Bake for about 30 minutes, or until a toothpick inserted comes out clean.

Let cool for at least 10 minutes before removing from trays.
Prepare the Frosting:

Whisk egg yolks with sugar in a saucepan. Add 2/3 cup heavy cream and whisk until combined.

Put the saucepan on medium heat until the egg and cream mixture thicken, donโt boil it. Remove from heat.
