For Baked Custard Coffee Donuts’ Dough
- Flour: We are using All-purpose flour for this recipe. If you like a little chewier donuts then you can swap it with bread flour as well.

- Milk: Milk will work as a binder for the donut and also an activator for yeast. Make sure it is lukewarm or warm to touch, perfect temperature would be 100ยฐF. If the milk is too hot it will kill the yeast.
- Butter: We are using Unsalted room temperature butter for the donuts. It gives it that fluffy buttery richness.
- Sugar: Sugar will give a little touch of sweetness to the donuts and for yeast to grow. You can use coconut sugar as well as a less refined option.
- Active dry yeast: Yeast is a raising agent. It will make the donuts fluffy and airy.
- Salt: Salt is essential for baked goods. It enhances the flavors overall.
The Custard Filling
- Egg and Egg Yolk: Eggs give the yellow color and smooth velvety finish to the custard.
- Sugar: Sugar will make the custard sweet.
- Flour or Starch: These are the thickening agents. If you like your custard a little lighter then we recommend using Starch.
- Milk: Milk is the base of the custard. We are using full-fat milk, you can use any other milk of choice but you might have to adjust the flour or starch to make the custard thick accordingly.
- Salt: Salt complements the sweetness and richness of the custard.
- Vanilla extract: It is optional but highly recommend for that delicious floral aroma and taste.
For the Coffee Topping (for 4 donuts)
- Butter: We are using unsalted room temperature butter for the topping.
- Sugar: Sugar helps in balancing out the coffee in the topping.
- Egg: It will make the topping rich and smooth.
- Flour: Flour will work as a thickening agent for the topping.
- Instant Coffee: It gives the delicious coffee flavor. We recommend using the best one you have.

Instructions
Make the Dough

Warm the milk (not hot) and mix in the yeast. Let it sit 5 minutes until foamy.

In a large bowl, mix flour, sugar, and salt.

Add egg, butter, and yeast mixture. Combine into dough.

Knead 5โ8 minutes (by hand or mixer) until combined.

Add butter to the dough and knead for 3-5 minutes until smooth and elastic.

Cover and let rise for 1 hour or until doubled in size.
Prepare the Custard

In a saucepan, whisk egg, yolk, sugar, flour/cornstarch, and a splash of milk until smooth.

Gradually add the rest of the milk while whisking.

Cook over medium heat, stirring continuously until thick.

Remove from heat, add vanilla, and cover with plastic wrap directly touching the surface.

Chill until ready to use. (Optional: fold in whipped cream once cool.)
Make the Coffee Topping

Melt butter using a water bath.

Mix in sugar, egg, and coffee until smooth.

Add flour, blend well, and chill for 20 minutes.

Transfer to a piping bag.
Shape and Bake

Punch down the dough and divide into 8 balls.

Place on parchment-lined tray, cover, and let rise 30โ40 minutes.

Preheat oven to 340ยฐF (170ยฐC).

Pipe coffee topping on half the donuts.
